Octave brings together Muscat à Petits Grains from eight old-vine parcels across Samos, on a mix of schist, quartz, limestone, and basalt. The 2019 spent 40 days on its skins before ageing in small clay amphorae and a concrete egg, followed by another year in bottle.
The texture was the wine. Dense and coating, it felt closer to drinking olive oil than a conventional white wine. Orange blossom came first, followed by brine and salt.
The weight in the mouth was extraordinary, occasionally even excessive. At those moments the balance slipped, but the bottle remained compelling. Textural as fuck, and an incredible experience.
