The 2023 Sálvora was tighter and less immediate than the 2022. It comes from old Albariño vines in Meaño and spent 12 months fermenting and ageing in 600-litre barrels.
It opened quietly, with tea, chamomile, lemon, and a little spice. The palate had firm acidity and a strong saline character that continued through the finish.
More appeared after an hour in the glass, but the wine never felt as open or ready as the previous vintage. The balance and complexity were already there; it simply needed more time.
Drink the 2022 now. Keep the 2023 a little longer.
