The 2022 Sálvora is more direct than the 2023. The acidity is sharper and the salty character more immediate. It already feels open and ready to drink.
We had it with clams, goose barnacles, and shrimp from the Bilbao market. The acidity cut through the shellfish while the saltiness echoed the food. It was an obvious pairing, and one of those bottles that made more sense at the table than on its own.
One year separates the two vintages, but they are in very different places. Drink the 2022 now. Give the 2023 time.
