Kilómetro 0 “El Origen” is Ismael Gozalo’s Verdejo from ungrafted vines on the sandy soils around Nieva, in Segovia. The grapes are picked by hand and the wine is made in clay tinajas with native yeasts.
Seven years after the harvest, the bottle was in excellent shape: alive, with body and elegance. Apple, brine and something like pollen. The acidity was very present, but a faintly sweet finish balanced it.
The skin contact is short, yet it is what gives the wine its structure. We drank it at home with cod.
