This pét-nat is made entirely from Auxerrois in Alsace. It was light, citrusy, and immediately enjoyable.
The bubbles were soft rather than aggressive, with ripe lemon and slightly sweet citrus fruit followed by a crisp finish. It was simple and direct, without much development in the glass.
That simplicity was part of the appeal. This was a bottle to open cold, pour generously, and finish without thinking too much about it.
